Did you know coffee beans actually grow in the center of a cherry-like fruit? Once coffee farms extract the bean from the center, the skins are dried and results as Cascara, a wonderfully versatile ingredient for any coffee or tea drinker. Caffeinated and high in antioxidants, Cascara is delicious hot or cold. When brewed, Cascara possesses a floral aroma; on the palate it’s a light-bodied, fruity tea-like beverage with notes of honey and raisin.
These were are dry-processed, a more traditional form of coffee farming where coffee cherries are dried whole, and rotated over the course of a month. Once the cherries have dried to the farmer’s liking, the beans are removed. The result of is gives the husks a more broken nutshell-like look. Since the cherries are dried whole, they have a slightly more fruitier notes, and lend themselves perfectly for syrup preparations.
